One of our summertime favorites.

INGREDIENTS

  • 3 cups cooked peas (recommended fresh but can use frozen)
  • 1 shallot chopped fine
  • 3 1/2 tablespoon fresh dill chopped
  • pinch flaked dried red pepper
  • 1/4 cup creme fraiche or sour cream
  • 1/4 cup mayonaise
  • juice of one lime
  • salt and pepper to taste
PREPARATION

If Using Fresh Peas:
Put in small saucepan and cover with cold salted water.  Bring water to a boil and immediately shut off heat.  Let pan sit on burner for three minutes, then drain peas and immediately plunge into ice water to cool.  Drain


DIRECTIONS

Combine first seven ingredients and mix thoroughly.  Add salt and pepper to taste.  Chill.  Enjoy.
